As a mom of 3 growing boys , I am constantly having to keep a kitchen stocked full of food and snacks. My boys love these muffins that I make. They make great snacks for school lunches and play dates. You can make them vegan by using non dairy chocolate chips! I add chia seed for a little surprise crunch and cinnamon for some added spice. I usually make these as mini muffins. Enjoy! 😍


Vegan Banana Chocolate Chip Muffins

2 cups whole wheat flour

1 1/2 tsp baking soda

1/2 tsp salt

3 tbsp chia seed

1 tsp cinnamon

1/2 coconut sugar

1/3 cup coconut oil

4 very ripe bananas

1/4 cup water

1 tsp vanilla extract

1 cup (non dairy) mini semi sweet chocolate chips


Preheat oven to 350F. Lightly grease mini muffin tins

In a medium bowl, mix the flour, baking soda and salt.

In a large bowl, beat the sugar and the oil. Then, add the mashed banana and chocolate chips. Stir in the water and vanilla until incorporated. Add flour mixture a little at a time and stir until incorporated.

Slowly add the dry ingredients and and gently stir . Be sure not to overmix.

Add scoops into the tins filling them around 3/4 and bake for 13 mins.

Once baked, pull out and cool on a rack.
